I’m going to share a recipe from Farmstead Chic that’s not only quick and easy but also incredibly nutritious: Healthy Zuppa Toscana Soup.

Healthy Zuppa Toscana Soup

Indulge in the ultimate comfort food that's also a brain-boosting powerhouse! This Healthy Zuppa Toscana Soup is a quick and easy masterpiece that helps support your cognitive function. Ingredients
  

  • 2 Tbsp avocado oil
  • 1 lb sausage of choice
  • 1 large onion
  • 3 cloves garlic, minced
  • 1 Tbsp Italian seasoning
  • 1 tsp crushed red pepper
  • 6 cups chicken broth
  • 2-3 lbs turnips, chopped
  • 5 oz kale, chopped (frozen works find too)
  • 14 oz full-fat coconut milk
  • Salt & pepper to taste

Instructions
 

  • In a large stock pot or Dutch Oven, warm the avocado oil.
  • Add the sausage and cook on medium-high heat for 5-7 minutes until browned.
  • Add the onion, Italian seasoning and crushed red pepper. Saute 3 minutes.
  • Add the garlic. Stir for 1 minute.
  • Add the chicken broth and potatoes. Bring your soup to a boil. Reduce heat, cover and simmer 10 minutes.
  • Add the kale and coconut milk and simmer an additional 5 minutes until turnips can be easily pierced with a fork and kale is tender.
  • Add salt and pepper to taste.

The original recipe can be found here and uses red potatoes instead of turnips, which is equally as delicious. If your metabolic flexibility has been restored, I’d encourage you to give it a try!

This is the coconut milk my husband and I use. 

We also love the flavor of polska kielbasa as opposed to Italian sausage. Feel free to experiment with different flavors, making sure to pay attention to the quality of the ingredients used to make the sausage. Better yet, make your own!
