As a busy dog mom, wife, pharmacist, and wellness professional, I don’t usually have time to cook elaborate meals. I don’t even have human children yet, so I can only imagine how crunched for time all you moms and dads are out there.
I’m also aiming to stay in mild ketosis to optimize my brain health, and it can be hard to find an easy meal that’s also perfectly balanced for the brain.

If I’m struggling with finding easy healthy meals, you probably are too.
So today I wanted to share my go-to fail-proof brain boosting recipe that literally takes me about 20 minutes to make.
Let’s get started!
Taco Salad for Better Brain Health
Why it’s my go-to recipe
First and foremost, I love Mexican food so naturally my favorite fail proof recipe would fall in this genre of food.
Second, you can alter the flavor pretty quickly by adding different toppings or spices so it won’t get boring.
Third, I can make it in about 15 minutes.
Ingredients
- 2 lbs ground meat (I’ve used grass-fed beef, turkey, and chicken so far)
- 1 onion, diced
- 1 can Original Rotel (don’t drain; you can also make your own version)
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp chili powder
- ½ tsp cayenne pepper
- ½ tsp red pepper flakes
- Salad:
- Lettuce
- Avocado or guacamole
- Pico
- Cilantro
- Crushed cassava chips (you can leave these out if having a root vegetable takes you out of ketosis)
Directions
- Brown meat with the onions in a large skillet of medium heat, stirring to break up the meat.
- Drain excess fat.
- Stir in Rotel and all the spices.
- Continue to cook over medium heat for another 3 minutes.
- Assemble your salad and enjoy!
Tips for switching up the flavor
- Grab a different can of Rotel than the original one
- Try using different types of onions
- Add extra diced peppers – jalapeño, poblano, ancho, and more
- Use smoked paprika instead of regular
- Use chipotle powder instead of chili powder
- Experiment with different toppings such as dairy-free soy-free sour cream or yogurt, extra sliced onion or pepper, dairy-free chipotle crema, and more
This easy recipe isn’t only good for the brain and a busy schedule. It’s good for the gut too!
